Crispy smores snacks

imageMissing the girls already so what am I doing……tidying up and ORGANIZING! Started with the pantry and found lots of partially used items…….marshmallows, broken graham crackers, almost empty cereal! So, I thought I would make them a healthy spin on Rice Krispie treats for a special back to school snack for when they get home. Β I call them CRISPY SMORES SNACKS!image

Just like rice crispy treats, with a few healthier and tastier additions!

I know they will love them!
Here’s the recipe:

3/4 stick Melted butter
2 cups Melted marshmallows (I sued a few different sizes that I had left in the pantry)
1 cup Gluten free crunchy rice cereal
1 cup Toasted oats whole grain cereal
1 tsp cocoa powder
2 T flaxseed meal
1/2 cup crushed graham crackers
1/8 cup mini choc chips
Sprinkle with shredded unsweetened coconut if you wish (such an excellent source of healthy fat)

Mix all ingredients, spread in 8X8 pan, sprinkle with coconut and let cool!

Can’t wait for them to try these!!
