MEXICAN for Breakfast? Sure why not!
Here’s my MEXICAN OMELET
This is so YUMMY and so SIMPLE!
Here are the ingredients:
1 RED container (6-8) Egg whites
1 YELLOW container of organic (canned) black beans
1/4 GREEN container of sauteed SPINACH
2 tablespoons of salsa (mild or medium)
**1 dollop of Plain GREEK Yogurt
- Saute the spinach for a few minutes then put on a plate.
- Cook the egg whites. Place on top of the spinach.
- Then top with the cooked black beans and finish with Salsa.
- for an added touch, add a dollop of plain GREEK yogurt (acts like sour cream)
Now you know how to be fancy for Breakfast!
And with eggs, you can make so many different creations. Have fun with it!
