Pumpkin Pie Overnight Oats

I have seen SO many Pumpkin flavored recipes out there this year, it’s almost insane.

EVERYTHING ISĀ šŸŽƒPUMPKINšŸŽƒ

So, consideringĀ I eat oatmeal almost every day, I just had to get in on it and come up with aĀ Pumpkin inspired OatmealĀ recipe!

So here it is,šŸŽƒPUMPKIN PIE OVERNIGHT OATSšŸŽƒ!

And in one try, I NAILED it! Ā This recipe is too good to be true.

Check it out!

You need a mason jar and a refrigerator! Ā That’s it!

Oh and a few KEY ingredients:

 

Ingredients:

2 Tablespoons pumpkin puree

Ā¼ cup Unsweetened Vanilla almond milk

2 Tablespoons Organic non fat Greek yogurt

1 teaspoon pumpkin pie spice

1 teaspoon Pure NaturalĀ caramelĀ extract

1 teaspoon cinnamon

1 teaspoon himalayanĀ salt

1 Tablespoon PURE maple syrup and/or 1/2 tsp of Stevia

Ā¾ cup old fashioned oats

1 teaspoon of Pepitas (shelled Pumpkin seeds)

 

Place all ingredients (except the seeds) into your mason jar and shake!!!
Cover and refrigerate overnight (or for at least an hour so the oats soften and absorb the liquid).

Top with the seeds and a little extra drizzle of syrup. Ā Enjoy cold, or microwave for 30-60 seconds (before you add the seeds and syrup) to enjoy warm!

COUNTAINER COUNT:
Oats – 1Ā YELLOW

Pumpkin –Ā If you use the puree from a can, you are to count it as 1/2 PURPLE, because it is condensed. If you are using fresh pumpkin, you can count it as 1/2 GREEN……quote from the 21 day fix creator herself!

The yogurt Ā – 1/2 RED
The pumpkin seeds – 1Ā ORANGE
