Stuffed Acorn Squash
So I had an ACORN Squash that I roasted this weekend and a bunch of ground turkey that I had already cooked. I do a lot of food prep on Sundays so that I can make dinners much easier during the week!. And these are things that I normally have on hand, ok, not normally the squash, but the ground turkey, yes!
So I decided to make STUFFED ACORN SQUASH! Here’s what you need:
1 BLUE Mozz Cheese
1 YELLOW Quinoa
1 RED Ground Turkey – cooked
1 GREEN – 1/2 Acorn Squash – roasted
diced onions – as much as you desire
Plain Greek Yogurt – 1 tbsp
Mediterranean Seasoning from the 21 day fix Nutrition Plan
Mix all of this together! Save 1/2 Blue of cheese to sprinkle on top.
If you double the recipe, you need 2 halves of the acorn squash. Make one for you and one for your spouse! Don’t forget to sprinkle the cheese!
Cook at 350 for 20-30 minutes until is looks like this!
Look at this YUMMINESS! The cheese is just perfect!
